‘Kepelbagaian’ merupakan perkataan utama apabila kita memperbincangkan tradisi makanan Malaysia. Di dalam perbincangan ini saya akan membawa anda sekelian melalui serambi gastronomi pelbagai kaum di Malaysia: Melayu, India dan China. Kita mulakan dengan pembudayaan makanan Melayu.

Dari segi sejarah, kaum Melayu ini mempunyai elemen-elemen dan usul asal dari Sumatra, Jawa, Thailand, Sulawesi dan juga Polinisia. Dengan pengaruh-pengaruh negara tersebut tidak hairanlah jika masakan Melayu mempamerkan sedikit sebanyak kualiti kulinari dari negara-negara tersebut. Di Selangor, kaum Melayu dahulu kala merupakan pahlawan Bugis dari Sulawesi dan bagi orang Melayu Negeri Sembilan, menamakan diri mereka sebagai Minangkabau dari Sumatra. Kita beralih ke Utara: Pahang, Perak, Pulau Pinang dan Perlis di mana pengaruh Acheh, Bugis dan Siam amat ketara. Pada abad ke 16, kaum Acheh mempunyai seorang ketua yang dikenali sebagai Mahkota Alam atau Iskandar Muda.

Beliau juga dikatakan mempunyai pengaruh besar ke atas negeri Pahang, Kedah dan Perak. Bagi negeri Kelantan, Kedah dan sebahagian negeri Terengganu pula dipengaruhi oleh Thailand atau Siam. Ini dapat dilihat dari segi penyediaan makanan dan dialek percakapan mereka: ala Siam.

Kita ke selatan iaitu ke Johor. Di sini terdapat beberapa penempatan kaum Jawa dan Bugis. Pada tahun 1639, di dalam perjanjian antara Johor dan Belanda, kerajaan Johor bersetuju untuk membantu menakluki Negeri Melaka dengan pertolongan pahlawan Bugis bernama Daeng Prani. Sebagai balasan terima kasih dengan kejayaan cemerlang ini, Daeng Prani dilantik sebagai Yam Tuan Muda Johor.
Sekarang kita ke Negeri Melaka untuk mengikuti perkembangan sejarah kaum Cina. Pengaruh dari negeri China ini telah mula menular pada abad ke-15. Ianya bermula dengan lawatan Laksamana China Yin Ching dan Cheng Ho. Mereka singgah di Melaka dalam perjalanan ke Barat. Admiral Cheng turut membawa bersamanya adat resam dan budaya kaum Cina.

Sultan Mahmud sungguh tertarik dengan kebudayaan Cina, lebih-lebih lagi apabila mengetahui mereka telah lama mengamalkan ajaran Islam. Perkahwinan di antara Sultan Mahmud dan Puteri Hang Li Poh mengeratkan lagi pertalian dua budaya ini. Walau bagaimanapun Malaysia hanya dapat menyaksikan pengaruh (tradisi, budaya dan masakan) dari China ini pada abad ke-18. Pendatang dari China dibawa bekerja di lombong-lombong di Malaysia dan mereka membawa bersama budaya tradisi dan nilai etika kerja.

Kaum India mula menapak kaki di Malaysia 2,000 tahun yang lalu. Mereka merupakan pedagang dan pada abad ke-10 terdapat beberapa komuniti kecil keturunan India di pinggiran pantai. Ketika dijajah oleh Kerajaan Inggeris, kaum India di bawa masuk ke Semenanjung untuk bekerja di ladang-ladang getah dan seterusnya menetap disini. Di Melaka pula di Kampung Tujung terdapat kampung Chitty. Keturunan India di sini dikatakan berasal dari Kalinga (selatan timur India). Kaum Chitty di sini berkahwin dengan penduduk tempatan dan menerap nilai, tradisi dan budaya mereka. Bagi kaum wanita Chitty, mereka tidak memakai sari seperti wanita India. Mereka memakai kebaya panjang atau kebaya pendek. Bagi kaum lelaki pula apabila menghadiri pesta keugamaan, mereka mengenakan pakaian dhoti bukan sarong yang dipakai oleh kaum India yang lain.

Sebagai negara kosmopolitan, Malaysia juga mempunyai potpuri budaya yang agak unik. Gabungan kaum Melayu, Cina dan India Cina berjaya menyatukan pelbagai hidangan kepada ‘hidangan Malaysia’ dan menjadikan ia sebagai satu tarikan kepada pelancong luar. Penduduk di Malaysia ini juga dikatakan banyak menghabiskan masa di meja makanan dan menjadikan masa menikmati hidangan itu sebagai aktiviti kebangsaan. Kaum Cina, India dan Melayu di Malaysia ini sentiasa kreatif, berganding bahu mereka masakan baru dengan menggabungkan pinjam meminjam tradisi budaya masing-masing. Dengan ini lahirlah nasi ayam, mi mamak, mi kari dan lain-lain.

Saya akan mulakan budaya makanan Malaysia ini dengan budaya makanan orang Melayu. Pelbagai lauk pauk tidak akan sempurna jika tidak diiringi dengan nasi. Nasi merupakan makanan utama bagi orang Malaysia dan orang Melayu amnya. Beras juga merupakan nadi budaya kehidupan dan adat bagi penduduk Asia. Bijirin kecil ini juga berjaya membentuk budaya diet (pemakanan) dan ekonomi penduduk Asia. Di Malaysia padi menjadi tanaman utama di Kedah dan Perlis dan dikenali sebagai ‘rice bowl of Malaysia’. Nasi dihidangkan dengan pelbagai lauk-pauk dan ulam ulaman. Bahan yang digunakan dalam masakan Melayu berkisar kepada santan, cili dan belacan. Hidangan orang Melayu dikatakan mampu menghangatkan suasana di meja makan. Hidangan Melayu terkenal bukan sahaja dari keenakan tetapi dari segi kepedasan dan juga penggunaan rempah ratusnya.

Santan merupakan bahan asas dalam masakan kita. Ia digunakan dalam segala jenis gulai atau masak lemak. Bahan perasa (seasonings) dalam masakan Melayu di bahagi kepada dua: rempah basah dan rempah kering. Rempah basah iaitu bahan yang ditumbuk dengan batu lesung: bawang, halia, bawang putih dan cili. Rempah kering pula termasuk biji ketumbar, jintan, buah pelaga, kayu manis dan lain-lain. Rempah ratus ini selalunya di sangai (digoreng tanpa minyak) terlebih dahulu sebelum ditumbuk atau dikisar. Orang Melayu juga banyak menggunakan bahan-bahan herba seperti serai, daun pandan, daun limau purut, daun kemangi, bunga kantan, kunyit, lengkuas dan buah pala.

Kita beralih pula ke masakan tradisi dan masakan popular orang Melayu di Malaysia. Kita masih mengemari masakan kampung atau masakan nenek dan emak kita dahulu. Orang Melayu di kampung-kampung masih berlandaskan pertanian. Di halaman-halaman rumah kampung kelihatan berkeliaran ayam, itik, ikan dari hasil tangkapan nelayan atau dari sawah dan bendang. Sayuran ditanam di belakang rumah dan juga di perairan sawah dan bendang. Pucuk paku, petai, daun pegaga, daun selum, daun kaduk, cendawan (kulat) dan lain-lain jenis ulaman daun menjadi makanan amalan orang Melayu di kampung. Daun-daun ini selain kaya dengan sumber vitamin dan mineral, ia juga tinggi dari segi serat. Daun kaduk dan daun pegaga telah mendapat pengiktirafan dari WHO sebagai herba yang mempunyai pelbagai faedah kepada kita. Ia boleh merangsang aktiviti otak kanak-kanak, pengaliran darah yang sihat dan menghaluskan tekstur kulit seseorang.

Untuk pesakit diabitis dan tekanan darah tinggi, ulam jering boleh dijadikan ubat kerana kandungan alkali yang tinggi dan berfungsi sebagai bahan dirutik. Tongkat Ali merupakan akar kayu yang terbilang hasiatnya dari segi penambahan tenaga batin dan juga tenaga fisikal. Tongkat Ali dijual dalam bentuk tablet dan juga serbuk. Di restoran dan gerai, kopi tongkat Ali menjadi minuman kegemaran para pengunjung. Dahulu ulam dan akar kayu hanya dipopularkan oleh orang Melayu tetapi sekarang mendapat tempat di restoran dan hotel-hotel, dimana kita lihat kaum-kaum lain turut meminatinya.

Nasi lemak patut dijadikan makanan kebangsaan Malaysia. Ia bukan sahaja menjadi kegemaran orang Melayu tetapi turut di pelopori oleh kaum Cina dan India. Nasi lemak dahulunya dihidang untuk sarapan pagi tetapi pada masa kini dijadikan hidangan tengah hari dan malam. Ia juga turut dihidang pada rumah terbuka dan dijadikan salah satu menu (ala carte) di hotel-hotel. Nasi lemak turut diiringi dengan beberapa lauk sampingan: kari ayam, rendang (ayam dan daging), sambal (sotong kering atau ikan bilis), ayam goreng dan paru goreng.

Di musim perayaan (hari lebaran, kenduri kendara) nasi tomato beserta lauk pauknya sentiasa menarik perhatian tetamu. Nasi tomato dihidang bersama ayam masak merah, dalca, ayam golek, pecal dan lain-lain. Bagi orang Melayu pantai Timur (Kelantan dan Terengganu) menghidangkan pelbagai juadah seperti nasi dagang, nasi berlauk, nasi minyak, ayam percik dan lain-lain. Negeri Perak pula berbangga dengan rendang tok dan gulai ikan sembilang tempoyak. Gulai lemak cili padi (ayam, ikan dan daging) pula dipelopori oleh orang Negeri Sembilan. Selain lauk pauk terdapat juga makanan ringan; laksa Penang, laksa Johor, pesembur, mi Siam dan lain-lain.

Manisan kegemaran orang Melayu ialah dari jenis bubur dan kuih muih. Bubur pulut hitam, bubur kacang, pengat pisang dan bubur cacar (kandungan keladi, keledek dan tepung gunting) merupakan manisan yang sangat popular. Kebanyakan kuih muih orang Melayu berasaskan beras, beras pulut dan ubi.

Contohnya kuih seri muka (di bawah pulut dan di atas kastad pandan) pulut panggang (pulut berisi serunding kelapa atau ikan) bengkang ubi, talam keladi, cucur badak, kuih lapis dan sagu gula Melaka. Manisan tradisi bagi orang Melayu pula ialah dodol, wajek, kuih koci, bahulu dan onde-onde. Kuih tradisi ini masih diminati terutama pada bulan Ramadhan dan lebaran. Minuman iringan pula, orang Melayu kita tidak akan lupa menghidangkan air sirap bandung, sirap selaseh, air kelapa dan air kopi kampung.

Bila kita menyebut nasi kandar, Pulau Pinang menjelma dalam ingatan kita. Nasi kandar di Pulau Pinang samalah seperti adanya nasi dagang di Kelantan atau Terengganu. Kini populariti nasi kandar telah menular ke negeri-negeri lain di Semenanjung. Kadang kala kita tertanya-tanya apa yang membezakan nasi kandar dengan nasi-nasi yang lain. Nasi kandar diiringi dengan pelbagai jenis lauk pauk (dalam 30 jenis masakan).

Contoh hidangan lauk pauk nasi kandar ialah: ayam goreng berempah, kari kepala ikan, ikan goreng, kari telur sotong, udang galah goreng, kari daging rusa, kari kambing dan lain lain. Berbalik mengimbas sejarah nasi kandar, kita akan ke selatan India. Di sinilah bermulanya di mana pedagang-pedagang India Muslim berulang alik antara India dan Semenanjung.

Pada mulanya pengaruh masakan mereka ini tertumpu di utara Semenanjung sahaja: Alor Setar, Kangar, Sungai Petani dan Penang. Lama kelamaan populariti nasi kandar ini menular keseluruh negara termasuk Sabah dan Sarawak.
Nasi kandar mengekalkan nama ‘kandar’ ini berlandaskan cara penjaja nasi ini menjualnya. Nasi dikandar di bahu (dua bakul atau raga dengan satu batang kayu) dan mereka akan berjaja merentas kampung-kampung. Pasa masa kini nasi kandar boleh dinikmati di restoran-restoran dan juga di hotel. Menikmati hidangan yang disajikan di atas daun pisang juga menjadi kegemaran orang-orang Malaysia.
Minuman iringan dengan nasi kandar ini ialah teh tarik. Ia sepatutnya juga menjadi air minuman kebangsaan Malaysia.

Since I've constructed myself a set of philosophical thoughts and matter of principle for my point of perception, I have always believed that being a male or female, girl or guy do not matter in any sense whatsoever. Aside from the obvious distinct between the sexes, and yes, chivalry, I don't see any point to deprive/discriminate any side of the genders.

Perhaps history might shed some light behind the all the vain controversies, assaults, superior throughout the centuries but I shall not wander in dry boring facts. Instead, a clash of thoughts between mine and my mom's, with some add ons from an aunty shed some light on me.



Mom's
Studies is a higher priority for a guy than a girl. It is not necessary for a girl to be as intelligent as a guy cause one way or another, she'll get married. Course not denying rights to her academic achievements, competent skills would do. Gradually the family would be her top most priority.

Mine
Let's not be ambitious and think of the so far fetch future of marrying yet. Youths, teens even tweens have the right to access to academics of all sorts. And it would be an individual choice of the child to acquire as much knowledge as he/she intends to. So why should there be such mind set of diminishing a girl's ambition to in depth her studies, to secure her dream career that restrains her motivation of embracing as much information as the opposite sex?

Well aunty had climbed the corporate ladder, but that was already a closed chapter for her. Yes she does have a working husband supporting the family financially. Aunty shares similar views with my mom on this matter. She mentioned, It will be a struggle to strike a balance between work and family. She is a university graduate, no doubt is capable of being Miss Independent. Yet once the family kicks in, priority shifts. On one hand, she feels regretful not maximising her potential and skills towards her business career; At the other end of the spectrum, she couldn't bare leaving her growing up kids without showering them with affection and care, like other fulltime housewives. even though a maid is at her dispense.
And the wise decision from her, is to make a U-turn, get back on track to devote her time and knowledge for the family.



Put some toughts into this matter, isn't it inspiring? When one reaches different stages of life, priority does change. Back to the question, It is not necessary for a girl to be as intelligent as a guy cause one way or another, she'll get married.

I've to concede that there is a certain degree of sexism in that statement. But, but but but... can't deny that it is utter bullsh*t. Perhaps a conclusion like this could wrap it up : Every single being has the right to his/her education. Nature has its way and through centuries, the woman bears responsibility taking care of the family while man places food onto the table. IT'S A FACT WE CAN'T DENY IT. Therefor, the level of education one aspires to complete, after all, is for his/her own satisfaction.

It has been years since my last post? Time surely flies.
And what prompted me to write a post now? Year end is near and the arrival of a new year gushing in!


Speaking bout the new year, 2008 was the BEST and WORSE year for me.
Let us put it this way, 2008 was definitely PHENOMENAL in every sense

I was so much intrigue with the news this whole year, 2008 was a pivot of the turning point, constructing my breeze new perspective outlook towards the world.

From the cringing moments (think Chua Soi Lek & Edison Chan), blatant lies (Anwar's sodomy case, BN's VERY promising reformations), void common sense (baju kurung too sexy issue), ruthless intimidation (ISA-Im with RPK) to long forfeited-victory for the rakyat (defining moment March 8 tsunami, Anwar's Permatang Pauh). More issues yet to be unveiled I believe.

Not everything's political though, 2008 I had the honour to meeting diverse people with distinct personalities, worked in committees, bonded new ties. priceless!

Though 2008 The entertainment scope was quite a letdown. Personally, apart from addictive hits, silver screens and Britney-gone-wild-AGAIN Hollywood dramas carried no impacts whatsoever on me. I reckon 2007 blockbusters out shined 2008s. Stories with no plots (The Day the Earth Stood Still), blank dialogues (Painted Skin), uninvited installment (The Mummy3 & HSM3) and biggest disappointment (Twilight). Somehow I enjoyed (dreadful) Clone Wars though.


and now the bad side. the WORSE side.

Co-Curriculum activities and commitments and current news quenched my learning desires to the extend I allowed them to shadow over form4 studies and impending major exams. That was a big blow.

Guess my mom had been right, "Tell me, does Anwar pay you for your studies, let you eat let you sleep?" My answer to that, "well...he gives us hope and..and CHANGE!" does not justify the fact that I sidelined my studies. Moral of story : Less Pakatan, more Pelajaran

And yes, my book shelve is in dire need of a replacement. Book replacement of Reader's Digest, TELL magazines, Discovery magazines, doctorjob's coursesnow with Sejarah, add maths, sciences and more Sejarah.

Another minute ticked by, seconds scuttled behind.
Clinging onto the clock, time still wouldnt stop.
It could been just a while ago when she promised not to tell anymore lies
and the other second ticks with the antithesis truth.
Or he greeting morning at the doorstep, only to die in a car collision later in the afternoon.


It's something unpredictable, but in the end it's right.
I hope you had the time of your life.


It has been solemn since the twinkle of a thought. A notion on how time dashes ahead without a trace, a thought on how intimidate as the ages grow old.
Blend the emotion of miss, wistful, anxious, gloomy, & even tantrum into the soul of one, let it engulfs entirely with ripple effects. Indulge in the desperation of time. Scream out from within to reverse the clockwise agony. To seek back lost time from the past...


Some say time heals. I say it kills.
The longer it dreads, the further it branches into something gloom. suffocating in a room with no air, just wanting it to die away. To perceive a total understanding of emotion and time, it's haunting.

Bright day ahead after a wake? Time is running out, as it's just a mere few days a way before everything falls back into place yet again for another semester. well at the other end of the spectrum, bright day ahead after a wake! Trash out all the daunting thoughts and brace the remaining time for your own sake! break free the chain of emotion and a nice day awaits.


I've seen kinds of happenings these past weeks.

For what it's worth it was worth all the while.

From learning, to missing, to understanding. Make it the time of your life.


So make the best of this test, and don't ask why
It's not a question, but a lesson learned in time

Cars and all kinds of vehicles running on fuels are frustrated in a gridlock, in procession to the nearest ESSO MOBIL SHELL station behind my house. I see lines of motors clogging the street, in which each and every car signalling to the left, enduring the late night jam just to pump in the last drips of cheaper petrol. as of midnight 05.06.08, consumers would suffer a 5% inflation due to the aggravating subsidises.

The sudden outbreak of news from the media officiating the hike of fuel prices, the wide speculations through SMSes regarding increasing price rumours, this is just the spread of red carpets leading the way to furthur inflation.


The last I checked on the price of drumstick ice cream, guess what. Nestle typical RM2.50 has reached RM2.70 now. right now at the market price. Drumstick Retro and Techno have succeeded Inferno, KitKat, Spiro with a 20sen increase of pricing. Make sure it's worth every penny you're spending on that indulgent.


There's more. Stroll around hypermarkets like Tesco, Carrefour, Giant. Do notice that the price for rice is ever changing, soaring up the scales. You can easily find stickers spreaded onto the original printed price tag. indicating new (& higher) prices.

& I believe there's much much more increase of inflation throughout the market for the coming days ahead.even subtle economy rice. time has changed nowdays.

I laughing myself off ironically as the bumper to bumper cars are honking each other. tantrum drivers huh? cant blame them, transportation is paramount for travel and business. speaking of travel, do wonder MAS would still struggle with its low cost courier despite petrol naik?




while the consumers suffer inevitably, there would sure be a period of entertainment for news and views would dissent over the rakyat and the BN government, amid escalating price tags.

OMIGOD


am I blind or something? No one had the courtesy of telling me the fact that Im surrounded by sexy dressed school girls every single day since secondary! Thanks thestar for breaking the news to me, I'll keep that in mind when I return school...


























Right.


Munirah Bahari, vice-president of The National Islamic Students Association of Malaysia, that the uniform worn by girls at government schools was “sexy” and “encouraged rape and pre-marital sex”





Having been through the government's education since I was seven, my incessant thought have been that the education in Malaysia has many loopholes and that not all students are equally benefited from it. It's my 10th year under Malaysia education and this would be the utmost surreal issue to me.












SPM graduates out there are desperate for scholarships. Struggling for their deserved tertiary education, they complain and jam the editors' inbox es with wistful letters. they make an issue out of it to attract the nation's attention.


At the mean time, instead of eradicating graduates' predicament, Munirah Bahari from Persatuan Kebangsaan Pelajar Islam Malaysia (PKPIM) screamed out to the media, claiming that "the white blouse is too transparent for girls and it becomes a source of attraction to men" and I say that's utter discrimination. both to the women and men.



And that claim came from an Islamic group, no doubt it furthur cause a forore among the academics. Extracred from Munirah's blog

Attempt to stereotype men to teransang is just so wrong. Mind you, there are girls out there in the world clicking from porn sites to porn sites just as you're reading this. On what base are you classifying lelaki-lelaki into rapists' or perverts' perception?

Students nowdays are already dissatisfied with the Islam, non-Islam, bumiputra, non-bumiputra terms. To dress up perempuan Islam with colours? The school has already a chunk of woes regarding pupils' attire and near future we'll see splodges of RED BLUE YELLOW PINK FLOURECENT GREEN BROWN dashed over the school compound. and, the higher chances are that only Muslims would abide it cause it's not complusary for the non-Muslims to memakai baju kurung berwarna you said? Wouldnt it contradicts the effort to promote racial harmony with discrimination among different religions?

I say the girl's a slut! A slut for wearing rainbow colour undergarments to school. A slut for seducing men for sex. A slut for exposing herself on her own will. A slut for disgracing her ownself. A shameless slut!

and does it has anything to do with the uniform? Does the uniform contribute to raping a secondary teen for she was showing off her Victoria Secret?

Answer yourself if you have a sane mind.

The white baju kurung has been catering batches of students for years. and I believe that the kementrian has a rationale behind selecting white. Any students wearing school uniforms of vary colours are deemed wrong. It's in the school discipline. secepat mungkin untuk menilai? What's the rush of it when there's no problem at all?



This irrationale statement by Persatuan Kebangsaan Pelajar Islam Malaysia (PKPIM) cause an air of wrath and dissatisfation. I confessed myself dissapointed over that baseless claim. Sense of discrimination tingle over the air as the issue kept coverage by the media.
Students would ostensibly feel ashamed, too.

Looking through the windscreen into the upbeat KL nightlife, minor dash of nostalgia rippled through my thoughts. Though a prominent city under the global eye, KL projects a tangled feeling over me.

Let's see. My parents grew up in KL and I'd been going to the city at least once a week when I was still in kindergarten. KL seemed never ending to me. From SOGO to the late night hawker stall shed under lorongs, it was really happening. Not to mention the countdown events annually. While lavish ornaments dressed up the city, sparkling lights blanketed the KL sky. Bukit Bintang was literally the bestest place ever for me then. Loved Planet Hollywood. Though I've left with vague memories of it, the collectibles and merchandises craved a vivid picture on me.


Yet my trips to there lessen as I got bigger. I suppose it was then when I became intimidated by the city. Not of ghouls or monsters roaming over its streets, but the other side of KL in which I failed to depict. Crime and foreign territories scarred its image. Blinking lights and the grotesque buildings no longer fancy me. Instead, news of missing child in SOGO, dubbed with ever deteriorating crimes cringe over it. It might still charm tourists with its idyllic night scene, but not for me no more.

Once a playland to me has falter into a dreadful location. Perspectives change as you go, but as far as you move on, things remain. So the next time I'll be going to Petaling Street, I would probably be wary. Still, KL would still be KL, with number of foreign workers escalating.

A high time for me to do some soul searching city searching then?
